Here's a recipe that the whole family will love:
3/4 lb. macaroni pasta
1/4 c. olive oil
1 pint cherry tomatoes, halved
One 9-oz bag spinach
6 oz. goat cheese
Salt and pepper
- In a large pot, boil macaroni in salted water until al dente. Drain.
- While your pasta is cooking, heat the olive oil over medium heat and sauté spinach and tomatoes until heated through, 3-5 minutes.
- Put the pasta and the spinach/tomato mixture into a serving dish with the goat cheese and stir together. Season with salt and pepper and serve.
