Healthy Mac ’n (Goat) Cheese
Here's a recipe that the whole family will love:

3/4 lb. macaroni pasta
1/4 c. olive oil
1 pint cherry tomatoes, halved
One 9-oz bag spinach
6 oz. goat cheese
Salt and pepper
  1. In a large pot, boil macaroni in salted water until al dente. Drain.
  2. While your pasta is cooking, heat the olive oil over medium heat and sauté spinach and tomatoes until heated through, 3-5 minutes.
  3. Put the pasta and the spinach/tomato mixture into a serving dish with the goat cheese and stir together. Season with salt and pepper and serve.
