Quick & Easy Bruschetta
This recipe makes a great appetizer but is also hearty enough for dinner served with a green salad.

One baguette
6 medium tomatoes
Approx. 1 c. of olive oil
Basil and oregano (fresh is best but dry will work)
Dash of salt
Teaspoon of balsamic vinaigrette (optional)
1 pkg. mozzarella balls

Preheat Broiler. Slice the baguette into slices about ¾ inches thick. Brush both sides of each piece with olive oil and broil until light brown, then turn bread over and broil other side until light brown. Chop tomatoes and add basil, oregano and salt to taste (a dash of balsamic is optional but gives a bit of tang). Slice mozzarella balls. When the bread is done, spread tomato mixture on each piece and top with a slice of mozzarella. But bruschetta back under broiler until cheese is melted. Then serve hot.
